Cheaty Potatoes & Onions

This recipe is "cheaty" for two reasons:

1. It uses canned sliced white potatoes. I didn't even know these things existed until my husband brought it home one day. It saves time because they're already softened and sliced.

2. The seasoning used is just a pre-made spice rub from Clubhouse. All that flavour from just one little shaker.

Serves 2-4

INGREDIENTS

2 tbsp olive oil

1 can (540mL) sliced white potatoes, drained

1 yellow onion, peeled, halved, and sliced

2 tsp Clubhouse La Grille Spicy Pepper Medley

1 red bell pepper, diced (this is optional, I just happened to have a red bell pepper that was going bad soon)

DIRECTIONS

1. Heat a large non-stick pan with 2 tbsp olive oil to medium heat.

2. Add in the sliced onions (and bell pepper if using) and cook for approximately 10 minutes, or until the onion has softened and become translucent and is starting to get some brown colouring.

3. Add in the potatoes and Spicy Pepper Medley seasoning and stir to combine.

4. Try to spread everything out in an even layer and refrain from stirring too often. You want to let the ingredients develop some browning and crispiness (AKA flavour and texture). Cook for an additional 12-15 minutes.
