Grilled Chicken Breast

Grilled chicken breasts are my go-to item when I'm too rushed to peruse recipes, or too rushed during the week to cook something more time consuming. We use a grill pan on top of the stove (though the BBQ would work too), and typically serve it along side a prepackaged salad kit. The salad pictured above is the Fresh Express Bacon Caesar Salad Kit (pretty sure there was 2 tsp of bacon bits in that kit, it was sad). Usually it's just the two of us for dinner, so we cook up four chicken breasts at a time and have this for two nights in a row. My husband likes the chicken cold with the salad the second night, but I still like to heat mine up and it's still juicy.
I don't have an exact recipe for this, as we just use the Clubhouse Maple Bacon seasoning. It's got a great smoky flavour with a touch of sweetness from the maple - we season the chicken breasts liberally with this stuff.


The recommended single serving size for chicken breast is about 4oz, which I'm pretty sure is just over half of one chicken breast pictured above... so keep that in mind if you are trying to keep your calories in check. The cook time varies depending on how thick your pieces are. On average, ours takes from 25 - 30 minutes using medium to medium-high heat. I turn the chicken every 7-8 minutes and closely monitor the heat as our pan isn't of the best quality and the heat dispersion is anything but consistent in varying parts of the pan. The chicken goes in a bit of a rotation so everyone gets a turn in the hot tub. I also use tongs to hold the chicken up to get some grill marks on all four edges. The caramelization that comes from this seasoning is so good! At one point we were advised to season with chunky salt and smoked paprika, but found that the Clubhouse seasoning overpowered that anyway and it made no difference.
