Lime Pie
The original recipe: Key Lime Pie by Simply Recipes

Serves 8 (more or less, depending on how big you slice it!)
INGREDIENTS
For the crust:
145g finely crushed graham crackers
1/4 cup unsalted butter, melted
3 tbsp white sugar
*There's no shame in skipping the above and buying a pre-made graham cracker pie shell to save time! It makes this already easy recipe feel nearly instantaneous!
For the filling:
300 mL sweetened condensed milk
1/2 cup of lime juice (I recommend buying 6 limes to be safe, as the sizing and juiciness may vary!)
3 egg yolks
1 tbsp lime zest, plus additional for garnish (optional)
For the whipped cream topping:
3/4 cup whipping cream
1 tbsp powdered sugar
1 splash of vanilla extract
DIRECTIONS
1. Preheat oven to 350F.
For the crust:
2. Mix together the crushed graham crackers, butter, and sugar. Then press into a pie plate in an even layer.
3. Bake for 10 minutes and set aside.
For the filling:
4. In a large mixing bowl, beat the eggs (I used a hand mixer) until they lighten in colour.
5. Add in the condensed milk and lime zest, beating for another 2-3 minutes.
6. Add in the lime juice and whisk by hand for about 1 minute until smooth and incorporated.
7. Pour filling into the pie crust and bake for 10 minutes. Set aside and let cool.
For the whipped cream topping:
8. Combine the whipping cream, powdered sugar, and vanilla in a large, chilled mixing bowl.
Hint: I used my KitchenAid stand mixer for this and just put the stainless steel mixing bowl in the fridge for a few minutes.
9. Using the whisk attachment, mix on high speed for ~2 minutes, keeping an eye on it so that you don't over mix, until the whipped cream can hold its shape.
10. Serve on top of the cooled lime pie and sprinkle with lime zest as garnish if desired.
