Meat & Slaw with Sriracha Mayo

Serves 4

INGREDIENTS

For the meat & slaw:

1lb ground beef

1/2 lb ground pork

2 tbsp olive oil

salt & pepper

1 bag (397g) coleslaw mix (without dressing)

1.5 tsp ground ginger

1.5 tsp garlic powder

3 dashes fish sauce

1 tsp rice wine vinegar (unseasoned)

1 - 2 tsp soy sauce

1 tbsp sriracha

1 tsp sesame oil

For the sriracha mayo:

8 tbsp mayonnaise (I used Hellman's)

2 tbsp sriracha

1 tbsp soy sauce

DIRECTIONS

1. Heat the olive oil in a large skillet to medium heat.

2. Add the beef, pork, and season lightly with salt and pepper.

3. Add the ground ginger and garlic powder and cook, using a spatula to break apart the ground beef and ground pork until browned and cooked through (no longer pink).

4. Add the coleslaw mix, fish sauce, vinegar, soy sauce, sriracha, and sesame oil and cook a few minutes longer (3-5 minutes), stirring to combine.

5. While the meat mixture cooks, in a small bowl whisk together the mayo, sriracha, and soy sauce.

6. If not serving immediately, store the sriracha mayo separately from the meat & slaw mixture.
