Lemon Dill Salmon
The original recipe: Lemon Garlic Herb Crusted Paleo Baked Salmon by My Natural Family

garnished with lemon slices & extra dried parsley
INGREDIENTS
2 pieces of skinless salmon (just under 7oz each)
3 tbsp unsalted butter, cut into cubes
1.5 tsp dill paste
1/2 tsp salt
zest of 1 lemon
1/2 tsp dried parsley
1/2 tsp garlic powder
2 dashes of white pepper
DIRECTIONS
1. Preheat the oven to 400F and line a baking sheet with aluminum foil.
*Note: I just use the toaster oven for baking the two small pieces of fish.
2. Combine the butter, dill, salt, lemon zest, parsley, garlic powder, and white pepper in a microwavable bowl and microwave for 30 seconds. Check to see if the butter is melted, if not, microwave another 25 seconds (it should be melted by now unless you were using frozen butter, in which case, wtf?). Mix together thoroughly.
3. Using a brush, evenly coat both pieces of salmon with the melted butter.
4. Bake at 400F for 12 minutes, or until the salmon is cooked through and flaky.

My Changes & Notes:
1. The salmon.
Unless I had a pretty substantial side dish, I would be so hangry if I ate just a 4.5oz piece of salmon. So the changes I made apply to a 2 serving recipe using 2 pieces of fish that were just under 7oz each. I opt for skinless pieces, as the skin gets soggy anyway. For the two pieces about 1-1.5" thick, I baked at 400F for 12 minutes.
2. The buttery coating.
To make the coating, I placed the following ingredients into a small, microwavable bowl:
3 tbsp unsalted butter cut into cubes
1.5 tsp dill paste
1/2 tsp salt
The zest of 1 lemon
1/2 tsp dried parsley
1/2 tsp garlic powder
2 dashes of white pepper
Once all ingredients are added, microwave for 30 seconds and check if the butter is melted. If not, do another 25 seconds and by now it should be melted. Stir to combine and brush onto the salmon before baking ~12 min.
I have made this dish exactly as the original recipe says with the fresh herbs etc. and it is delicious! However, I have the ingredients above on-hand on a regular basis, so I find this even easier albeit less "vibrant" than if I used fresh herbs. Most times the simplicity and ease outweigh the vibrancy for me on a weeknight.
