Note
We used this marinade and let it sit in the fridge overnight. The next evening, we baked the chicken on racks over top lined baking sheets at 375F (try to shake off as much excess marinade as you can when placing the chicken on the racks) for 35 - 40 minutes, or until chicken is cooked through.
While the chicken rested, we warmed up the pita bread and chopped up roma tomato and red onion as toppings. After cutting up the chicken, I spread store-bought tzatziki on my pita, topped with some chicken, added more tzatziki and topped with tomato and red onion. Yum!
